11/28/2023 0 Comments Black label bourbon![]() We age our Rye Whiskeys on the upper floors of our rickhouses for a minimum of 4 years with regular expressions expected to be between 6 and 8 years of age. We enter the new, air-dried #4 char, 53-gallon barrels at 100 proof and 105 proof for our Rye Whiskey and age until maturity in our barrelhouse. We use Kentucky-grown Heritage rye from our local KY Proud farm. Our rye mash bill is one we created for a broader balance of flavor to offset the typical high ryes commonly found. Our three-grain recipe is 56 percent rye, 33 percent corn and 11 percent malted barley. We barrel at 100 proof and 105 proof to highlight the balance of the distillate and alternate solubility expression we get from the barrel at a lower proof. Once our traditional sweet mash process is distilled in our column stills, we enter the barrel at the lowest entry proof we know of in Kentucky. Our Kentucky Straight Rye Whiskeys are offered as Small Batch, Bottled in Bond. They both are bourbon cask-aged-forward Scotches with. Johnnie Walker Red and Black at their core actually aren’t all that different. I actually expected Red to hold up fairly well in this comparison, but turns out that Black completely steamrolls it into near nothingness. All of our whiskeys are aged and matured on our 168-acre campus inside any one of our rickhouses. We entered the cooper select, #4 char barrel at 110 proof after coming off the still around 137 proof. This is one of the highest ratios of wheat used in a Bourbon made in Kentucky. Our Bottled in Bond release mash bill is 64 percent corn, 24 percent wheat and 12 percent malted barley using our yeast strains. ![]() In addition, the Bottled in Bond gives you assurance the Bourbon was properly distilled, aged between 5-6 years and bottled by us under the supervision of the U.S. What is a Small Batch? At Wilderness Trail, it’s 18 barrels per batch, which was the result of one fermenter. After all, the barrels impart a large part of the flavor. The Small Batch selection offers nuances only premium cooper select barrels can create using 18-month-old air-dried staves. Purchase Info: $7.99 for a 750 mL bottle at the Party Source, Bellevue, KY Needless to say, when I was picking up multiple bottles of Heaven Hill with green and white labels, only one bottle of Black Label came home with me. Heaven Hill, Black Label version, is listed as thirty-six months old and bottled at only 80 proof. It is NOT even of an age where they give the age in years. Unlike some of its brand-mates, this one is NOT six years old. What this post is about is the Black Label version of Heaven Hill. And yeah, I probably shouldn't give any more away on that one since I haven't written that post yet. And before you say I shouldn't expect anything good to come in under ten bucks a bottle, I'll have you know I picked up multiple bottles of the 90 proof, six-year-old Heaven Hill for just a dollar-fifty more. Oh man! Wouldn't it be a nice surprise if a company was selling their best whiskey for a price an average person could afford? This bottle was $7.99. I just noticed that's what the neck label says about this bourbon.
